Chartreuse Smash

Preparation

Cocktail

  • Using a muddler or the handle of a wooden spoon, mash 1 fresh sage leaf1/2 lime cut into wedges, and 2 Tbsp. honey simple syrup (see below for recipe) in a 16-oz. mixing glass or a cocktail shaker 4–5 times just to release juices and oils (don’t mash the ingredients to bits). Stir in 2 Tbsp. Chartreuse liqueur and 2 Tbsp. London dry gin. Transfer to an Old Fashioned glass. Fill halfway with crushed ice, stir, then mound more crushed ice on top. Garnish with sage leaves and a lime wheel.

Honey Simple Syrup

  • Combine 1 cup honey and 1 cup water in a saucepan and bring to a simmer; stir until sugar dissolves. DO AHEAD:Can be made up to six months ahead. Store in the refrigerator.
